My Favorite Sweets

In a previous post, I told you I like to bake. I thought I would share with you my three favorite holiday recipes. They are always around the Heynen house in December. By the way the cookies in the picture are ceramic.

Peanut Butter Balls

Ingredients:
1 cup Peanut Butter
1 cup Butter, softened
1 cup Rice Krispies
1 cup Coconut

Directions:
Mix the peanut butter, butter, and rice krispies together. Form into balls and roll in coconut. I like to store mine in the refrigerator and then put them on a plate for parties.

Peppermint Patties

Ingredients:
3/4 cup sweetened condensed milk
1 1/2 teaspoons peppermint extract
4 cups confectioner's sugar
3 cups semisweet chocolate chips
2 teaspoons shortening

Directions;

Mix the milk and peppermint extract together in a bowl. Start adding the powdered sugar a little at a time. Keep adding the sugar until the mixture becomes a stiff dough that is no longer sticky. Roll into 1 inch balls and flatten with your hands. I put them on wax paper on a cookie sheet and let them dry out for a couple of hours. Turning them over half way through will help.

In a separate bowl melt the chocolate chips. Add the shortening and stir until smooth. With a fork dip the patties into the chocolate. Lay them back onto the waxed paper to cool.
